Please help clarify for me - I have worked 2 jobs between May 2010 and present.
ACS have assessed both to be suitable from the period of 23rd May 2014.

Am I to update this date in my EOI against that specific employment/employer or retain the current one (May 2010)?

I don’t understand your question. I don’t know your job start and end dates either.

If the jobs have been counted relevant by ACS, then you can claim them as relevant work experience.
